Popsies Addictive Chocolate Cake

1 cup melted Butter
1 cup 70% Cocoa - Dark Chocolate, broken
3/4 cup castor sugar
1 cup extra strong coffee
3/4 cup SIFTED Self Raising Flour – (Good quality flour please)
3 Tablespoons QUALITY Cocoa Powder
3 tsp Vanilla Essence
2 Eggs (Organic if possible)


Mix the butter, sugar, chocolate and coffee in a food processor until well blended: the sugar should be dissolved, the chocolate well melted, but it doesn't matter if there are still some solid chocolate pieces.

Add the flour, cocoa powder, vanilla and eggs, and process until smooth.

Put into greased or Non Stick 9 inch cake pan, and bake in a 375 Degree oven – if fan forced lower 10 degrees for around 35 –40 minutes.  You will know when it is done as it will spring back in the middle when pressed.


Once cooked take out of the oven and leave to cool for 5 minutes before inverting on a wire tray to cool.

Dust with icing sugar before serving.  Is lovely to serve with a scoop of whipped cream or Ice Cream.

TIP:  Always beat eggs with a fork before adding them to any cake recipe.
