Sultana and Rum Cake – Grandad Ted’s - EASY
This recipe was from Grandad Ted I have converted the measurements for you to make it easier.
200g butter – room temperature
225g sugar – brown
300g sultanas
300g plain wholemeal flour (Triple Sifted)
1 heaped teaspoon baking powder – sifted with flour
1 teaspoon of powdered cinnamon – sifted with flour
2 eggs well beaten
½ cup rum
Pre-heat oven to SLOW (about 150c)
Grease and line a 20cm (8 inches) cake tin with greaseproof paper 3 fingers width above the top of the pan.
Place sultanas and rum into saucepan and add water but ONLY ENOUGH to finish covering the sultanas. SIMMER for 8-10 minutes. (Sultanas will get moist plump and flavoursome!)
Drain off all excess moisture, add butter. Let cool whilst you then –
Beat together eggs and sugar in a bowl, add the fruit mixture and a little flour, stir, then gently fold well in the rest of the flour mixture (I find a little at a time is best)
Decant into the middle of the cake tin, and gently spread out to the sides.
Place in middle of the pre-heated oven and bake for around 1 to 1½ hours or until cooked. You know your oven. I find testing the cake with a metal skewer is the best way to see if cake is cooked.
Remove from oven, let rest for about 15 minutes, before decanting onto a wire cake rack – cool completely before cutting.
Note:
You can use Spelt Flour – I have baked this cake using it and it is delicious. I have also tried bleached flour; however, it was not to my taste. But it may be to yours – do not be afraid to try it.
You can use any kind of Spirit with the water – I have tried them all – delicious. ALSO, if you desire not to use spirits, just cover with water or even pre-made tea.
I make this using GREEN tea as the liquid base when making this cake for my girl friends children and grandchildren (they take slices to school in their lunch box) Full of fibre, and goodness for them.
Serve with a cup of loose leaf tea or your favourite blend of coffee. My elderly Dad loves this cake and will have a big slice with a cup of coffee with a dash of rum in it!
